Guys. I have news. Our asparagus is up, and it made it to the plate! That may not seem like a big deal, but I’ve been really struggling to keep up lately, and my fresh fruits and veggies are paying the price. Actually, I’ve been paying a pretty big price, too, because it is beyond expensive to waste produce that’s past its prime. I beat myself up every time I neglect those fresh lovelies in my fridge, but as I tell my husband, the day I lose the will to buy it and bring it home with the best intentions, it’s all over.
How to Keep Produce Fresh
So, I remain an optimist at the farmer’s market, buying for the meal plan in my head, even if it doesn’t always come to fruition. We mamas try, don’t we? Well, earlier this month I found a little kitchen hack that has made it possible for me to throw out FAR less, even when life is a whirlwind of soccer games, doctor appointments and work deadlines. Rubbermaid® FreshWorks™ Produce Savers kept my asparagus fresh and crisp until I got around to making this Sweet Sesame & Soba Noodle Salad with Asparagus Ribbons for my lunches at work.
- 3 oz soba noodles
- 6–8 stalks asparagus, washed
- For dressing:
- ¼ cup sesame oil
- ¼ cup rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon finely grated peeled ginger
- 1 tablespoon tahini
- 1 squeeze fresh lime juice
- 1 teaspoon cane sugar or honey
- salt and pepper, to taste
- For garnish: 3–4 chives, chopped
- sesame seeds
- Add soba noodles to 3 quarts boiling water. Return to boiling. Reduce heat to low and simmer uncovered, 4–5 minutes, or until cooked to desired tenderness. Drain; rinse thoroughly with cold water, drain well. Place in a medium-sized bowl.
- Place all dressing ingredients into a blender. Pulse a few times to combine and emulsify.
- Cut bite-sized tips off stalks of asparagus. Using a vegetable peeler, peel long ribbons from each stalk of asparagus. Add tips and ribbons to bowl with cold noodles. Pour dressing over noodles and asparagus and toss gently to coat. Sprinkle with chives and sesame seeds
This cold noodle salad comes together quickly with very little cook time, and the soba noodles make it hearty enough to stand on its own for a meal. (Can we just take a moment to appreciate the beauty of the easy-cook soba noodle?) I also love the sweetness of fresh asparagus, especially when it’s sliced into delicate, thin ribbons with a vegetable peeler.
