Happy Ice Cream Week!
OK. So it’s not really Ice Cream Week. Not nationally, anyway. Just here. I would blame it on today’s warm weather or that breakfast banana split I made, but really, I’m just obsessed. I always have been.
As a kid, long Sunday drives for ice cream were a very special thing. In fact, when I wasn’t allowed to go on a trip to Ireland in 7th grade, my parents healed my broken heart with the biggest sundae they could find. Then, as a teen, I served ice cream for 5 summers straight. That’s where I learned to toss a marshmallow in the bottom of a cone to stop it from leaking.
Food of the gods, my friends. No lie.
If rich and creamy is your thing, GO. NOW. We’ve tried the Peanut Butter Pie (with chocolate cookie pieces and peanut butter swirls) and the Chocolate Malt, below (reminiscent of an old-fashioned hand-mixed malted milk shake!) and both made my knees a little weak all on their own. No toppings or adornments needed.
Next on our list to try: Strawberry Shortcake and Mint Cookies N’ Cream.
My husband and kids are purists, so we also picked up the Old Fashioned Vanilla. It’s a simple, sweet flavor that’s anything but plain.
And this is where that marshmallow trick comes in. We don’t eat those anymore, but that trick does inspire me to get a little creative with our cones! A serving of antioxidant-rich blueberries is a super fun surprise at the bottom of a cone, and it helps keep the portion size balanced and appropriate. A handful of berries topped with a small scoop of EDY’S = dessert perfection!
It’s sort of like an upside-down sundae, with no mess. Pretty cool, right?
And I didn’t tell the kids that they were in there. You should have seen their faces!
Actually, here’s one of those little faces now! Can you tell she loved finding her buried berries? And I loved watching her.
