Everything I needed to know about making sandwiches, I learned when I was five.
This was my mother’s cookbook when she was little, and she passed it on to me. ( I may be exaggerating just a bit when I say it taught me “everything,” but I spent hour after hour memorizing every word of every page, and I’ve never forgotten that little red-haired girl.
In fact, I’m pretty sure I have not made a single sandwich in my lifetime without hearing those words, “Don’t neglect the corners!”
I did leave a few things behind – I mean, a cheese, mayonnaise and butter sandwich? NO THANK YOU VERY MUCH.
But these checkerboard finger sandwiches have come in handy more times than I’m able to count. Not an idea that’s going to blow anyone’s mind, obviously – it’s a sandwich, stacked with 3 pieces of bread, then sliced. But oh, the memories it brings back for me!
If my daughter gets only a fraction of the enjoyment I did out of this book, I’ll be one happy mama.
But until she’s ready to take off on her own in the kitchen, I’ll continue to use these cute little sandwiches to get whole grains into her tummy (and her brother’s.)
All you have to do to create a sandwich with at least 8 grams of whole grains in every serving is start with Nature’s Harvest bread.
Honey Wheat, Whole Grain White, it doesn’t matter – All Nature’s Harvest varieties carry the whole grain stamp, and they don’t contain artificial colors, flavors or high fructose corn syrup. (Plus, they’re all on rollback for $1.97 nationwide, only at Walmart!)
To make your checkerboard, just layer 3 slices of bread with fillings in between. For a true checkerboard, make sure you vary your bread varieties! Try 2 slices of Stone Ground Whole Wheat with Honey Wheat in the middle, then reverse them for the next sandwich.
Once you (or your child) has your sandwich stacked, just slice it into three “fingers” like our little friend in the book says. Or, if your filling are squishy, you can slice the bread first and stack later.
It works great with our fave PB&J, as well as our other fave sandwich, turkey salad with sweet onion and chopped apples. One of my favorite way to serve lean protein and fresh fruit!
