Coffee and chocolate, chocolate and coffee. Asking me to choose which I like best is like asking me to choose a favorite child. But there is one thing I can tell you about both of my loves: quality matters. That’s why I chose Brooklyn Bean Roastery coffee for my latest favorite summertime dessert: Homemade Mocha Fudge Pops. Back to the Mocha Fudge Pops
When I started putting this recipe together in my head, I knew I had to use the Oh, Fudge Coffee. I mean, what else would you start with for a fudge pop, right? The rest of the recipe is an adaptation of one I found at Smitten Kitchen, which I tweaked a bit to fit my needs.
I’ve made all kinds of frozen pops before, but never fudge, until now. Why, oh why, did I wait so long?! These Mocha Fudge Pops beat the pants off store-bought pops, yet they have that familiar fudgy mouthfeel that is soooo satisfying.
Knowing exactly what’s in them? That’s the icing on the cake, so to speak. Real ingredients, like cream, butter, pure cocoa and coffee – all whisked together and heated into a thick batter that is hard to part with long enough to freeze.
Mocha Fudge Pops – a childhood favorite, all grown up!
- 2 tablespoons semisweet chocolate
- 1 cup strong brewed hot coffee
- ⅓ cup sugar
- 1 tablespoon cornstarch
- 1½ tablespoons unsweetened cocoa powder
- ½ cup whole milk
- ½ cup heavy whipping cream
- Pinch of salt
- ½ teaspoon pure vanilla extract
- ½ tablespoon unsalted butter
- Place chocolate in the bottom of a medium saucepan. Pour hot coffee over chocolate, stir until chocolate is melted. Place pan over low heat; stir in sugar, cornstarch, cocoa powder, milk, cream and salt. Raise heat to medium. Continue to cook, stirring continuously, until mixture thickens, approximately 5–8 minutes. Remove from heat, add vanilla and butter and stir until well blended.
- Allow to cool slightly, then pour into popsicle molds. Freeze 30 minutes, insert sticks, then continue freezing until solid.
The really fun part about this recipe is that you can change it up every time just by choosing a different variety of flavored coffee. Brooklyn Bean Roastery has (without question) the best selection of unique flavors and seasonal varieties of ANY coffee brand I’ve tried.
Next up: Fudge Pops made with their Black and White Cookie coffee! And the Hazelnut…and maybe the Cinnamon Subway…ooh, I wonder how the Maple Sleigh would be? Luckily, I have a coffee brewer that will brew them all so the flavor POPS.
