I participated in Mom Blog Tour at the Summer Fancy Food Show on behalf of Wendy’s Bloggers and received Felix products to facilitate my review. #MomBlogTourFF
What do you think of when you hear “jam”? Do you think tea and toast? I always did, until I met with representatives from Felix Jams at the New York Fancy Food Show. They traveled all the way from Sweden to attend the show, and their dedication to their product was obvious the moment they started showing us all you can do with their star superfruit: the lingonberry!
A sausage glaze. A cracker spread. A meatball sauce. A turkey wrap condiment. There are just so many ways to go savory with Felix Lingonberry Jams!
This wasn’t my first time trying Felix Jams. Being in the grocery industry for so many years, I’ve come across their Lingonberries before – but this time was different. Having the experts there to tell the story of their popularity in Sweden, along with a demonstration on how many different ways Lingonberries can be used really opened my eyes to the possibilities for this not-too-sweet Swedish favorite.
Plus, I had never seen the new varieties before. All lingonberry-based, but now flavored with real add-ins, like spiced apple and cinnamon, ginger, or blueberries. My mind kept wandering off to things like baked brie, glazed vegetables and grilled chicken, all made a little Swede-r with lingonberries!
A Few Facts About Lingonberries
Trees cover 95,553 square miles, or 55% of the surface area of Sweden. Where there are woods – you can find berries, and in Sweden, anyone is allowed to pick them. ~Felixjams.com
So, if you think about it, anyone in Sweden can make their own jam. If you want to succeed at selling jam commercially, it has to be the best. Like, really the best. That’s what Felix is. Dedicated to sustainability, quality and simple ingredients, Felix Jams are a favorite of adults, children and gourmets everywhere (including my house.)
Fun fact from the show: The average Swedish household goes through a jar of Lingonberry Jam a week!
So, it only seemed right to crack our first new jar of Felix Jams to pair with a super-savory, spiced dish like Jerk Pulled Pork. An easy meal to make in the slow cooker, it’s hearty and delicious served on grilled sourdough bread, and the sweet-and-slightly-tart addition of Lingonberry Jam on top was the finishing touch that just put it over the edge. Years ago, I used to make a roast pork loin recipe that was topped with a sauce made with cherry preserves, and this touched on that spicy-sweet combo that was always so popular in my house.
Only this Jerk Pulled Pork was much easier in the slow cooker, and using Felix Jams means there were no artificial ingredients or preservatives – just pure Lingonberries from the Swedish forest.
Sounds a little bit magical, doesn’t it? 🙂
Jerk Pulled Pork with Lingonberry Jam
- 3 pound pork loin
- 1 small onion
- 2 jalapenos, seeded
- 2 teaspoons smoked paprika
- 2½ teaspoons dried thyme
- 2 teaspoons ground allspice
- 2 teaspoons black pepper
- 1½ teaspoons garlic powder
- ½ teaspoon ground cinnamon
- ½ teaspoon cayenne pepper
- ½ teaspoon salt
- 2 teaspoons brown sugar
- 1 12 ounce beer
- ¼ cup balsamic vinegar
- 1 jar Lingonberry jam
- 1 loaf hearty sliced bread, sturdy enough for grilling
- In a food processor, finely chop onion and jalapenos. Mix all spices together. Coat pork loin with onion/pepper mixture and spice mixture. Rub in well with your hands. Place pork loin in the bottom of crock pot. Add beer. Cook for 6 hours on low, or until cooked through and tender. Remove pork loin, shred pork with a fork and add back to crock pot. Remove a cup or so of liquid, if desired (this will give you a thicker sauce.) Add balsamic vinegar and cook for an additional hour.
- Grill or toast bread (butter, if desired.) Serve pulled pork on bread, topped with Lingonberry jam.
Start it in the morning, and you’ll have sandwiches ready by dinnertime.
Just look at that flavor brewing!
Don’t forget the Lingonberries! They really do take this easy meal from good to great. Do you host game day on Sundays? Be careful if you pull this recipe out – you just might get stuck hosting the big game party every week!
