Sweet Sesame and Soba Noodle Salad

A cold noodle salad with fresh asparagus ribbons and a sweet and tangy Asian-style sesame sauce.
Serves: 2
  • 3 oz soba noodles
  • 6–8 stalks asparagus, washed
  • For dressing:
  • ¼ cup sesame oil
  • ¼ cup rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon finely grated peeled ginger
  • 1 tablespoon tahini
  • 1 squeeze fresh lime juice
  • 1 teaspoon cane sugar or honey
  • salt and pepper, to taste
  • For garnish: 3–4 chives, chopped
  • sesame seeds
  1. Add soba noodles to 3 quarts boiling water. Return to boiling. Reduce heat to low and simmer uncovered, 4–5 minutes, or until cooked to desired tenderness. Drain; rinse thoroughly with cold water, drain well. Place in a medium-sized bowl.
  2. Place all dressing ingredients into a blender. Pulse a few times to combine and emulsify.
  3. Cut bite-sized tips off stalks of asparagus. Using a vegetable peeler, peel long ribbons from each stalk of asparagus. Add tips and ribbons to bowl with cold noodles. Pour dressing over noodles and asparagus and toss gently to coat. Sprinkle with chives and sesame seeds
For extra flavor, add one clove of garlic or one small cippolini onion to ingredients in blender.
