Fruit and Walnut Chicken Salad Sliders

A perfect potluck recipe that's full of fresh fruit and nuts. With chicken salad sliders this good (and easy) you'll never have to wonder what to bring again.

  • 4 small chicken breasts (approx. 3–4 oz each, or about 1 lb. chicken)
  • 1 tablespoon olive oil
  • salt and pepper, to taste
  • 1 medium yellow onion
  • 2 small apples (or one large)
  • 1 cup grapes
  • ½ cup diced walnuts
  • 1 cup mayonnaise, or to taste
  • slider buns
  • watercress, for garnish
  1. Preheat oven to 375 degrees. Brush chicken breasts with olive oil and sprinkle with salt and pepper, to taste. Bake, covered, until cooked through and meat thermometer inserted in thickest part reaches 165 degrees.) Remove from oven and allow to cool.
  2. Meanwhile, in a food processor, chop onion and apples. With a knife, slice grapes in halves or quarters.
  3. Once chicken has cooled, place in food processor and chop finely. Place chicken in a bowl with apples, onion, grapes, walnuts, mayonnaise and salt (in moderation) and pepper, to taste. Mix until thoroughly combined.
  4. Scoop salad onto buns. Top with watercress. Leave open-faced, or top with top bun.
Save time by precooking chicken.

Add a dash of curry powder for a different twist.
