Mediterranean Nachos

  • one bag Saffron Road Cucumber Dill Chips
  • ½ cup sour cream
  • juice of ½ lemon
  • pinch garlic powder
  • 1 Tablespoon fresh chopped dill
  • salt and pepper, to taste
  • ½ small cucumber, diced
  • ¼ cup kalamata olives, sliced
  • Salsa, chopped tomatoes, hummus, as desired for bowl in center of plate
  1. Blend together sour cream, lemon juice, garlic powder, fresh dill, salt and pepper with a whisk or hand blender. Arrange chips on a plate as you would nachos, then drizzle with dill sauce. Top with cucumbers, olives, and additional chopped dill. Serve with hummus, salsa/tomatoes or additional toppings, if desired.
