½ standard block neufchatel cheese, room temperature
1 packet Emergen-C (orange or tangerine flavor)
2 Tbsp orange zest
Additional orange zest, to taste
Powdered sugar or jam, optional
Instructions
For French Toast:
Beat egg, vanilla and cardamom in a shallow bowl. Blend in milk. Dip bread in egg mixture quickly, coating both sides evenly but not soaking bread.
In a medium nonstick griddle or skillet, cook slices over medium heat until crisp and browned on each side.
For Orange Whip:
Add cold whipping cream to a mixer bowl. Beat on medium speed until thickened, but not stiff (too long, and you'll have butter!) Add neufchatel cheese; mix to blend, again being careful not to overwhip. Add contents of Emergen-C packet and orange zest; fold in to incorporate.
Serve orange whip over warm French toast. Garnish with additional orange zest and jam or powdered sugar as desired.
Notes
Note: this is NOT a sweet recipe. If you prefer your French toast a bit sweeter, a spoonful of your favorite jam or a dusting of powdered sugar is the perfect touch.
