Orange Whip French Toast

  • French Toast:
  • 8 slices sturdy bread, white or whole wheat
  • 3 eggs
  • 1 tsp vanilla
  • ¼ teaspoon cardamom (or cinnamon)
  • ½ cup milk
  • Orange Whip:
  • ½ pint heavy whipping cream
  • ½ standard block neufchatel cheese, room temperature
  • 1 packet Emergen-C (orange or tangerine flavor)
  • 2 Tbsp orange zest
  • Additional orange zest, to taste
  • Powdered sugar or jam, optional
  1. For French Toast:
  2. Beat egg, vanilla and cardamom in a shallow bowl. Blend in milk. Dip bread in egg mixture quickly, coating both sides evenly but not soaking bread.
  3. In a medium nonstick griddle or skillet, cook slices over medium heat until crisp and browned on each side.
  4. For Orange Whip:
  5. Add cold whipping cream to a mixer bowl. Beat on medium speed until thickened, but not stiff (too long, and you'll have butter!) Add neufchatel cheese; mix to blend, again being careful not to overwhip. Add contents of Emergen-C packet and orange zest; fold in to incorporate.
  6. Serve orange whip over warm French toast. Garnish with additional orange zest and jam or powdered sugar as desired.
Note: this is NOT a sweet recipe. If you prefer your French toast a bit sweeter, a spoonful of your favorite jam or a dusting of powdered sugar is the perfect touch.
