Jerk Pulled Pork with Lingonberry Jam

This is one sandwich that just won't quit. Flavorful, spiced pork loin, slow cooked and shredded, then sandwiched with Lingonberry Jam between two slices of grilled bread.

Ingredients
  • 3 pound pork loin
  • 1 small onion
  • 2 jalapenos, seeded
  • 2 teaspoons smoked paprika
  • 2½ teaspoons dried thyme
  • 2 teaspoons ground allspice
  • 2 teaspoons black pepper
  • 1½ teaspoons garlic powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • 2 teaspoons brown sugar
  • 1 12 ounce beer
  • ¼ cup balsamic vinegar
  • 1 jar Lingonberry jam
  • 1 loaf hearty sliced bread, sturdy enough for grilling
Instructions
  1. In a food processor, finely chop onion and jalapenos. Mix all spices together. Coat pork loin with onion/pepper mixture and spice mixture. Rub in well with your hands. Place pork loin in the bottom of crock pot. Add beer. Cook for 6 hours on low, or until cooked through and tender. Remove pork loin, shred pork with a fork and add back to crock pot. Remove a cup or so of liquid, if desired (this will give you a thicker sauce.) Add balsamic vinegar and cook for an additional hour.
  2. Grill or toast bread (butter, if desired.) Serve pulled pork on bread, topped with Lingonberry jam.
