  • 1 pound shredded chicken
  • 1 cup shredded Cheddar cheese
  • 1 8 oz. block cream cheese (or neufchatel) cut into cubes
  • ¾ cup cayenne pepper sauce
  • ⅛ cup fresh chopped chives or spring onions, if desired
  • 1 package (16 count) Blue Dragon Spring Roll Wrappers
  • 2 Tablespoons olive oil (or use pan spray)
  • Blue cheese or ranch dressing, for dipping

  1. In a saucepan over medium heat, combine chicken, Cheddar cheese, cream cheese and cayenne pepper sauce. Heat and stir until well blended. Remove from heat.
  2. Soften wrappers by placing in water according to package directions. Lay each wrapper, one at a time, on a damp tea towel to fill. If using chives or spring onions, sprinkle a few on wrapper where filling will go. Place a heaping tablespoon of filling in each wrapper, fold sides in, then roll up.
  3. In a large frying pan, heat oil over medium/high heat (or spray pan with pan spray.) Place spring rolls in heated pan, a couple at a time, allowing them to brown and crisp on one side (about 2 minutes), then flip to the other side and brown. Flip carefully and only once, if possible, as wrappers are very delicate and tear easily.
  4. Serve crispy spring rolls with blue cheese or ranch dressing for dipping.
