Boston-style baked beans with bacon, adapted from Healthy Slow Cooker Revolution Cookbook.
Recipe type: Side dish
Cuisine: American
Serves: 6
  • 1 onion, chopped fine
  • 3 slices bacon
  • 8 cups of water, plus extra as needed
  • 1 pound dried navy beans, picked over and rinsed
  • 5 tablespoons molasses
  • salt and pepper to taste
  • 4 tablespoons packed dark brown sugar
  • 2 tablespoons brown mustard
  • 1 tablespoon cider vinegar
  1. Sautee bacon strips and onion in a small pan, stirring occasionally, until onion is softened (about 5-8 minutes.) Transfer to slow cooker.
  2. Stir in water, beans, 2 tablespoons molasses, and 1 teaspoon salt. Cover and cook until beans are tender, 9–11 hours on low or 6–8 hours on high.
  3. Discard bacon, if desired. Drain beans, reserving 1 cup cooking liquid. Return beans to slow cooker and stir in reserved liquid, sugar, mustard, vinegar, and remaining 3 tablespoons molasses. Season with salt and pepper to taste.
  4. (Beans can be held on warm setting for up to 2 hours. They may thicken, and can be loosened with extra hot water or any leftover cooking liquid.)
