Chili Mango Gazpacho with Cucumber and Tarragon

I participated in the Mom Blog Tour at the Summer Fancy Food Show on behalf of Wendy’s Bloggers and received DOLE Fruit n’ Spice products to facilitate my review and Chili Mango Gazpacho recipe.
One step ahead of the game: that’s me! Haha…don’t let me fool ya. I’m a hot mess over here, as usual, but I DO have one of this year’s holiday party appetizers all figured out. Simple and delicious always equal a winner, and this recipe is both…and then some! A little bit of experimenting in the kitchen and I landed on a spicy-sweet Chili Mango Gazpacho with cool cucumber and a touch of fresh tarragon. Friends, believe me when I tell you that people will be asking for the recipe, and it only takes about 10 minutes start to finish. But I can’t take all the credit. The pre-chopped spicy mango chunks came straight from the geniuses at DOLE.

Chili Mango Gazpacho

The #MomBlogTourFF team met with DOLE not once, but twice, during this year’s Fancy Food Show in NYC. They’re innovators, so there always seems to be something new, and I love seeing what they’re up to because DOLE fruit is non-GMO, which makes it a regular in my shopping cart. Usually, I’m buying DOLE for my kids (the DOLE Mixations rock!) but the new DOLE Fruit n’ Spice line, which includes the mango I used here, has opened up a whole new world of recipe inspiration that goes way beyond lunchboxes.

Spicy-sweet with just a little heat, this easy gazpacho surprises with cool cucumber and a hint of fresh tarragon. Easy to make in minutes. Serve as appetizer shooters for New Year's Eve!

Recipe type: appetizer, entree
Serves: 4 cups
Ingredients
  • 1 12 ounce bag DOLE Fruit n' Spice Chili Lime Mango pieces, thawed but cold
  • 1 medium cucumber, peeled and seeded (approx. 1 cup)
  • ¼ cup olive oil
  • ¼ cup rice vinegar
  • 2 Tablespoons fresh tarragon
  • ¼ cup sugar
  • ½ teaspoon sea salt
  • Dash of ground pepper
  • Cucumber matchsticks and red pepper flakes, for garnish
Instructions
  1. Place all ingredients except garnish in a high-powered blender (such as a Bullet, Ninja or Vitamix.) Blend until smooth. Pour into individual serving bowls or glasses; garnish with cucumber, pepper flakes and a sprinkle of black pepper. Serve while cold.

As you saw above, the new DOLE Fruit n’ Spice line includes Chili Lime Mango chunks, which you can serve over grilled chicken, toss into a smoothie or whirl into a cool gazpacho, like I did…

…but the spice doesn’t stop there! DOLE also offers Honey Lime Pineapple Chunks (great in a stir-fry!) and Cinnamon Apple Slices with just a touch of cayenne heat. I promise you – you haven’t had apple pie until you’ve added a bit of spicy heat and some vanilla bean ice cream on top. And the chopping is already done for you!

    I would use mine in a stir fry or a salad. My boys would love to just eat it as is. They love different things. I can’t wait until they have it available in our area so we can try the pineapple with honey and lime. That is going to make amazing stir fry or fajitas.
