Oh, healthy breakfast. Why do you elude me so? I try and I try, but most days, coffee it is. It’s a time thing, an energy thing, a lack of drive and creativity thing. But now? Now I’ve found an answer that has my morning mojo reeling again. A huge thanks to our friends at Ninja sending the best blender our way so that we might swirl up some smoothies, blend some bisques and blast some nuts into smooth butters…and then tell you all about it (which I will do, in just a minute…) Our favorite creation so far? A deliciously spiced, slightly sweet Carrot Cake Smoothie.
Oh yes. Carrot cake.
Trust me, you’ll want to wake up to this almost-dessert that whips up in, like, zero minutes. (Or maybe 3.) Sweetened with dates and honey or maple, speckled with cinnamon – and a bit of hidden turmeric for the health benefits – it’s like a slab of grandma’s carrot cake, minus the cream cheese icing. But that’s OK, because the graham on the rim puts a little bit of that decadence right back in.
It just feels sturdy and hearty, which is why it always feels right to me to serve it in a trusty mason jar. With a spoon.
- 1 can coconut milk (approx. 13 oz.)
- 1 cup yogurt
- 12 baby carrots or 2–3 medium sized carrots
- 1 tsp cinnamon
- ½ tsp turmeric
- ½ tsp vanilla
- 3 large pitted medjool dates
- (or alternate sweetener to taste. Maple syrup, honey and coconut sugar work well.)
- For graham cracker rim:
- 1 tsp of maple syrup or honey
- 2-3 Tablespoons graham cracker crumbs
- pinch of shredded carrot and a sprinkle of walnuts for garnish
- Add all ingredients to high-powered blender. Blend until smooth.
- To rim glass, spread graham cracker crumbs out on a plate. Dip edges of rim into honey or maple syrup, then dip into crumbs.
- Garnish with shredded carrot, walnuts and a dash of cinnamon.
