Wow. These past few days have seriously blown my mind. Have you ever gone after something you wanted, only to get it and think, “What have I done?!” Well, that’s the story of my career lately. I’m not some mega-success story or anything, but I’ve been really blessed to find myself busy and buzzing lately with new opportunities. Sometimes, I think it’s too much. I should scale back, slow down. BUT, then I remind myself that my passion is important. Everyone’s passion is important. And what can really be wrong about that, right? I’m simply loving my work life these days – and there have been many, many times I couldn’t say that.
Of course, life is all about balance. Well, maybe not balance, exactly, because that’s just about impossible. Maybe it’s more like a harmonious flow, that shifts from one thing to the next, trying to give everything your best effort when its time comes. For example, 100% of my attention goes in at the office, but then when I get home and get a chance to chill with the family, 100% of my attention is directly to them… and my Häagen-Dazs®.
Pretty spectacular, isn’t it? It’s hard to look away.
Ok, you caught me. We’re talking about ice cream today, but ice cream IS LIFE, isn’t it? It’s always been a part of mine, and fabulous, velvety, impeccable quality Häagen-Dazs has always been a favorite. For me, the brand has always meant simplicity at its best, and it’s one of the earliest recollections I have of the realization that less can be more when it comes to food.
3-ingredient Strawberry Mint Ice Cream Sauce
That “simple, quality ingredients” mindset has stuck with me throughout the years, and it’s really the basis for all of my recipes today. Sure, I get a little outside of that box on occasion, but for the most part, fruits, veggies and herbs are my thang – and never more than when it comes to dessert.
The ice cream sauce I made to accompany our latest Häagen-Dazs treat features just 3 ingredients: fresh strawberries, fresh mint leaves and that one iconic ingredient that just about every mom has in her house – a fruit cup! Yup, mandarin oranges, juice and all. You can add a little sugar or honey if you feel it necessary, but when you spoon this heavenly sauce over your scoop of vanilla bean, you will see how much you don’t need any additional sweetener.
And sure, you can use a fresh orange if you’d like. But those fruit cups can be a real lifesaver in a pinch!
I should probably also mention a little something about our family’s approach to sundae creation while you’re here, since you mght notice it in my photos. We like to serve our sundaes upside down! Instead of filling the bowl with ice cream and topping it with our fresh and lively fruit sauce, we prefer to do it the other way around.
That bowl below? Yup, it’s filled with strawberry sauce, flecked with fresh, fragrant mint, and there’s a small scoop or two of ice cream on top. It’s my attempt at keeping portions appropriate, and it really works!
- 2 cups diced fresh strawberries
- 4–5 large fresh mint leaves (1 small bunch)
- 1 mandarin orange fruit cup
- (sugar or honey, optional)
- In a small or medium saucepan over low heat, simmer strawberries, mandarin oranges and mint leaves until fruit begins to break down. Once mixture is soft, pour carefully into a blender or food processor and pulse until blended. Pour back into pan and simmer until slightly thickened. Remove from heat and cool or chill before serving.
- (Sugar or honey can be used to sweeten, if desired, but we didn't find any sweetener necessary. )
See how easy that is? You can make it ahead of time, and leftovers will last a few days in the fridge. (Or you can pour it on pancakes or oatmeal.)
