What could be more fun than a sweet, salty, crunchy, coconutty popcorn treat? For this year’s Easter snack at daycare, we’re making HOPcorn!
And, as always, it’s 100% free of artificial food dyes. Happy snacking!
Toasted Coconut Hopcorn
- 7 cups air-popped popcorn (or 2 bags if using microwave popcorn)
- 1 generous pinch sea salt
- 12 oz. white chocolate, chopped for melting (We love Callebaut!)
- juice of one carrot
- 2 cups coconut, lightly toasted
- 1 bag (5 oz.) SunMaid Strawberry Greek Yogurt Raisins
- 1 bag (5 oz.) Simply Balanced Blueberry Greek Yogurt Raisins (Find them at Target!)
After popcorn is popped, spread it out on a baking sheet lined with parchment paper. Sprinkle with 1/2 of the coconut. Melt chocolate in a double boiler or in the microwave (if using microwave, melt in 30 second intervals to prevent scorching.) Once melted, drizzle half of popcorn mixture with white chocolate using a spoon or piping bag.
Add just a touch of sea salt to the whole sheet. Sprinkle with more coconut and both types of raisin while chocolate is still wet. (You may not use all the raisins. 2 whole bags is a lot.)
Add carrot juice little by little to remaining white chocolate until you reach your desired shade of orange. Again, drizzle chocolate over popcorn mixture using a spoon or piping bag. Top with any remaining coconut.
Once dry, break up into pieces. Enjoy!

This post about Easter crafts featuring Peeps was brought to you by…Peeps! I received samples to facilitate my review. All opinions are my own and 100% honest.
You might be surprised to see Peeps popping up here on my page. Yes, we’re a dye-free household, but there’s no denying that some foods – especially seasonal ones – can have tons of nostalgic value. Nothing reminds me of my Dad and my childhood Easter celebrations more than a pack of brightly colored marshmallow Peeps, and honestly it just wouldn’t be Easter without them! So, what do we do? We get crafty!
We always want better for our kids, right?
Sure, I want my son to have more than I had growing up. More opportunities, more experiences, more everything. But that’s not to say that what I had wasn’t good enough. Quite the opposite, really. In fact, as spring settles in and a sense of renewal hits the new land we now call home, I find my mind flooded with my own childhood memories of spring.
Funny how the season seemed so long as a child, isn’t it?
Not so much any more. The days are flying by. As I watch my son change from a baby into a little boy before my eyes, I realize more each day that I have to make the most of this. It won’t be long until he has no time for dear old Mom, so this spring I plan to share with him all the wonderful spring things that made such an impression on me as a child. Gardening, cooking with my mom, exploring the outdoors. Now that he’s two years old, he can really get down and dirty with us…and let me assure you, he is.
Spring has always been my favorite season. I recall so vividly the days spent helping my parents ready the garden so we could grow all my favorite things…
