It’s bacon. It’s fudge. It’s bacon fudge.

Something happened today.

I didn’t mean to do it, but somewhere between washing diapers and mopping floors, I accidentally made 2 1/2 pounds of sweet, salty, crispy, creamy heaven.

Alright, so it wasn’t a total accident.

I know, I know. I say that I strive to eat healthy foods, whole foods, natural foods. And it’s true. I promise…it’s true. But this particular project was inspired by the request of a coworker, and once the wheels started turning, something came over me and I just couldn’t stop myself…

Besides, I’m not feeding it to my kid, and about 95% of it is going to the office tomorrow to be devoured by my coworkers.

So, move over chocolate and peanut butter….

Blog friends, I bring you BACON FUDGE.

Wanna make it, too?

  • Get your bacon ready first. Cook one pound of your favorite high-quality bacon, preferably a maple or hickory smoked variety, until crispy. Crumble into small pieces (I chose to get rid of the really fatty parts, so I probably ended up using a little over 1/2 the pound on the fudge.)
  • Prepare your favorite fudge recipe. I used the Never Fail Fluff Fudge recipe. I’m not such a fan of the corn syrup in Fluff, but I know this recipe works, and didn’t want to lose my ingredients by experimenting. A bag of Ghirardelli 60% cacao chips elevates this particular fudge to perfection.
  • Once fudge is poured into the pan, sprinkle the top with bacon crumbles. Press slightly into the warm fudge so they stick. (Make sure to reserve 4 or 5 bacon bits to stick into the warm fudge on your spoon before licking. Just make sure not to have too much fudge on your face when your husband walks into the room. 8O )

  • Drizzle the top of your slab o’ fudge with some additional chocolate (it looks pretty, and helps your bacon stay put.) I chose a bit of white and a little more dark.

  • Allow to cool; cut and serve. (Or lock yourself in a room, alone, and have at it. ;) )
